Chef Manny is bringing the tropical vibes with a coconut curry shrimp dish and a mango passion DonQtini cocktail.
Coconut Curry Shrimp:
INGREDIENTS:
Coconut curry sauce:
- 1/8 cup canola oil
- 1/4 yellow onion small dice
- 1/2 green bell pepper small dice
- 1 carrot small dice
- 2tbls flour
- 1qt vegetable stock
- 1can Coconut cream
- 2cups Heavy cream
- 2 Tbls curry powder
- 1/8cup Don Q Rum coco
STEPS:
In a saucepan Heat up oil, add onion, peppers, carrots, sautéed for couples of minutes
Add the garlic, cook for about a minute, and add the flour, mix till well combined.
Add stock while whisking and bring to boil
Add Coconut cream and let simmer for about 20minutes.
Add curry powder.
Rice:
- 1 1/2 cup of water.
- 1cup of rice
- 1/4 onion
- 2 garlic clover
- 1Tbls oil
- 1Tbls Butter
- 1 top salt
STEPS:
Heat up a sauce pan with the oil, add onion, garlic.
Add rice stir for about a minute
Add water, butter, and salt bring it to boil and the bring heat to low until done.
Shrimp:
- 1/2 Tblsp minced garlic
- 1Tbsp Olive oil
- Salt and pepper
STEPS:
In a Sautee pan on medium high heat add oil and garlic Sautee for about 10 second for the garlic to release its flavor add shrimp salt and pepper. Cook the shrimp for about 4 minutes.
Mango Passion DonQtini:
- 3oz Passion Juice
- 3oz Mango Juice
- 2Oz Don Q Coco
- 2Oz Don Q Naranja
–Shake well and serve!
